The next cooking essentials class at the Darien Community Association will be Baking I: Sweet & Savory Pastry for Pies, Tarts & Quiches.

The Nov. 18 program will be led by Paula Nusslein; the DCA is at Darien Community Association, 274 Middlesex Road.

Nusslein will deliver skills-based training to help home chefs cook without a cookbook and will focus on key baking skills. Nusslein will cover the science behind baking with dough, then demonstrate how to make pastry dough by hand and using a food processor, offering tips on how best to roll out and transfer, freeze and store dough, as well as how to prebake tart and pie shells, and make pastry cream.

To practice these new techniques, students will be shown how to make a savory meat turnover with sweet cream pastry dough, a classic Tart Tatin, quiche, and a fresh fruit tart. Students will be provided with a class handout including all recipes and tips covered.

This class will take place from 9:30 to 11:30 a.m. and the fee is $70, or $55 for DCA members.
